Many believe it’s impossible to enjoy a truly good paella in Barcelona’s Gothic Quarter… until they arrive at Los Pergaminos.
Here, there are no tricks and no tourist traps—just an authentic paella, prepared with the care and tradition this iconic dish deserves, made to be shared and savoured.
Good rice, a proper homemade stock, a slow-cooked sofrito and high heat, along with quality ingredients—that’s all it takes to make a real paella.
Our chef’s suggestion changes from day to day, but the one we love preparing most is our seafood paella: juicy prawns, tender baby squid, clams, mussels, and galeras, all cooked with care so every bite is full of flavour, character, and Mediterranean soul.

Right in the heart of Barcelona’s Gothic Quarter, tradition has always had a home.
Los Pergaminos first opened its doors in 1989, when our parents, María Dolores and Vincenzo, poured their hard work, passion, and countless hours in the kitchen into creating a family restaurant meant for sharing, not showing off.
For years, they cooked regional stews, grilled dishes, and seafood platters with the same care you’d use when cooking for friends around your own table. Today, that spirit lives on in the hands of the second generation.
We grew up between tables and the kitchen, learning early on that good cooking matters, but making people feel at home matters even more. That way of understanding hospitality stayed with us. Today, the second generation carries it forward, cooking the way we were taught: simple, honest, and rooted in tradition. At Los Pergaminos, that means dishes made to order, our house paella, and tapas inspired by Catalan and Spanish classics, with small international touches, always guided by the family spirit that defines who we are.
