Many believe it’s impossible to enjoy a truly good paella in Barcelona’s Gothic Quarter… until they arrive at Los Pergaminos.
Here, there are no tricks and no tourist traps—just an authentic paella, prepared with the care and tradition this iconic dish deserves, made to be shared and savoured.
Good rice, a proper homemade stock, a slow-cooked sofrito and high heat, along with quality ingredients—that’s all it takes to make a real paella.

Our chef’s suggestion changes from day to day, but the one we love preparing most is our seafood paella: juicy prawns, tender baby squid, clams, mussels, and galeras, all cooked with care so every bite is full of flavour, character, and Mediterranean soul.

if we had to tell the story of our home, it would go like this:

In the heart of Barcelona’s Gothic Quarter, there’s a place where tradition is still alive. Los Pergaminos opened its doors in 1989, led by our parents, María Dolores and Vincenzo, who, with hard work, passion, and long hours in the kitchen, built a family run restaurant designed to be shared, not to impress.
For years, they served regional stews, grilled dishes, and seafood platters always with the care and dedication of people cooking for friends. Today, the second generation carries on the tradition.

Raised among tables and stoves, we learned from a young age not only a passion for cooking but also the importance of making everyone who walks through our door feel at home.
We uphold the rustic and sincere foundation our parents taught us, with home-style, traditional cooking at the heart of Los Pergaminos: honest, freshly prepared dishes, our house paella, and tapas that blend Catalan and Spanish traditions with subtle international touches, all carried out with the family spirit that defines us.
